Watermelon and Heirloom Tomato Salad

This refreshing dish was prepared by Chef Ricardo Jarquin of Travelle Kitchen and Bar which is located in the Langham Hotel. The demonstration took place at the SOAR Farmers Market on Tuesday July 11, 2017


The Salad

  • 2 each small heirloom tomatoes (or substitute fresh peaches)
  • 6 ounces watermelon
  • 1 ounce pickled onion
  • 6 ounces lime vinaigrette (see below)
  • Fresh mint-as needed
  • Fresh cilantro-as needed
  • 2 ounces cucumbers-sliced

Pickled Onions

  • 6 ounces red wine vinegar
  • 3 ounces sugar
  • 2 ounces sliced red onions
  • Salt -to taste

Lime Vinaigrette Dressing

  • 8 ounces lime juice
  • 4 ounces extra virgin olive oil
  • 8 each limes-zested
  • 2 tbsp sugar
  • Salt-to taste


Lime Vinaigrette Dressing
Mix all the ingredients in a small bowl. Add salt to taste. Place in a cooler until all other ingredients are ready.

Pickled Onions
Slice the onions as thick or thin as you prefer. Mix vinegar, sugar and salt in a small bowl. Taste for balance adding more sugar or salt as you prefer. Let onions sit for at least 10 minutes before adding to salad.

Mix all ingredients in a large serving bowl. Dress salad and toss lightly.

Serve chilled and enjoy!!
